1. Happy 2019!!

Happy New Year! Hope you all had a wonderful New Years Eve and that 2019 is off to a great start for you. This year, my family threw a party on New Year's Day which was tons of fun. And, of course, we watched the ball drop on New Year's Eve! Now cue a month of me accidentally writing 2018 on all of my dated documents.

2. The (Fluffiest) Vegan Pancakes

I love love love making pancakes. And there's nothing sadder than a non-fluffy pancake (that's just a wannabe crepe). The biggest struggle with making vegan pancakes is getting that amazing fluffiness that is usually created by eggs, but I've found an (easy and simple!) recipe that does the trick. The only downside is that it calls for white flour, but if you're willing to sacrifice some of the airiness of the pancakes you can substitute for whole wheat. Tip: when you cook the pancakes, put a lid over your skillet. For some reason, that really helps them to rise rather than fall flat.

3. After-Christmas Sales

After-Christmas markdowns are a blatant last-ditch effort for brands to maximize profits before the end of the year,  but they can be a great way to get a good deal, as long as you don't make any impulse purchases just "because it's on sale" (guilty!). This year I spent wisely and just picked up a red bow top from Anthropologie that I've had my eye on for months, and invested in a replacement for my Lululemon leggings that have seen better days (I must have re-sewn the hole I have in one knee at least four times). Did you pick up anything, or are you sick of shopping after the Christmas season?

4. On the Basis of Sex

I saw the new movie about Ruth Bader Ginsburg, On the Basis of Sex, and it was amazing. I tend to enjoy biopics, especially those about inspiring women, but the film blew my expectations out of the water. This is definitely one of the rare films that I would be willing to see a second time in theaters!

5. A-maz-ing Veggie Burger Recipe

My dad recently made this recipe for carrot, cumin and kidney bean veggie burgers and they turned out absolutely delicious. He found it through the Washington Post's latest food feature of a British budget chef. Not only is the recipe delicious, but it's also super easy and the ingredients don't cost and arm and a leg!
